Sweet potato black bean casserole

2 pound(s) sweet potato(es)
30 oz canned black beans
15 oz canned diced tomatoes
1 bunch(es) spinach
1 Tbsp ground coriander or garam masala
1 Tbsp Durkee Ground Cumin Seed
1 cup(s) shredded part-skim mozzarella cheeses
slice sweet potatoes ~1/4 inch thick & quarter
spray casserole dish and lay down a layer of sweet potato slices
cook beans, tomatoes & spinach in a skillet, season w/spices)
layer half of bean mixture on top of sweet potatoes. layer some cheese on top, then more sweet potatoes, the rest of the bean mixture, and the rest of the sweet potatoes.
bake, covered, for 25 minutes at 400. uncover, top with rest of cheese, and bake for 25 more minutes.
